The Hygiene Officer is responsible for the overall implementation of sanitation and hygiene standards of the restaurant and the hotel. They are also responsible in ensuring that all food served to guests are free of microbiological and physical contamination, and that all work areas conform with the requirement set by the local health regulatory.
RESPONSIBILITIES
- Raise PR for non-stock and stock request and follow up on status
- Prepare request for payment forms related to FSMS / HACCP
- Liaise with vendor regarding food sampling schedule and reports
- Update all FSMS and HACCP manuals as required
- Monitor performance and attendance of management team members during training, meetings and conduct Food Safety self-audits as mandated by company and/or health regulatory

- Compile all audit issues and release summary reports to all related departments
- Participate in all internal audits and to all SLIM FSMS audits

- Monitor the closure of all issues indicated in CARs (Corrective Action Reports)
- Assist the Executive Chef and Chief Steward in verifying the closure of CARs issues
- Remind concerned departments for any pending CARs
