JOB SUMMARY:
The Meat Cutter is responsible for performing all meat cutting and or slaughter activities. He/ she is required to comply with all personnel safety, food safety, quality, and sanitation standards set by the company. The position is responsible for ensuring all products are cut and trim consistently and are produced according to the requirements of the customers. The position is also responsible for contributing to the food safety, quality, and productivity objectives of the plant.
DUTIES AND RESPONSIBILITIES:
Production Operation
- Coordinates with Lead Butcher on the different meat cut products to be produced.
- Ensures that all meat cut products and or slaughtered are done according to the requirement of the customers.
- Ensures that all meat cut and or slaughtered products are properly labeled.
Quality Standards and Safety Management
- Perform standard operating procedures in the process.
- Ensures that all products are cut and trim consistently and efficiently within our quality standard.
- Comply with all food safety, quality, and sanitation standards.
- Make sure work stations are always clean and organized.

- Performs other job-related duties as assigned.
Qualifications
EDUCATION:
- At least high school graduate
EXPERIENCE
- At least one (1) year experience in butchery/meat cutting
CRITICAL SKILLS OR COMPETENCIES REQUIRED:
- Working knowledge of all meats operations process
- Detail-oriented with good organizing and coordination skills
- Vast knowledge on different meat cuts, meat quality and preparation

What we're looking for
We are looking for a skilled and detail-oriented Butcher who has strong knowledge and understanding of meat products,seafood and vegetables quality, cutting procedures, and preparations. He is responsible for weighing, labeling, cutting and storing of meat products, seafood and vegetables as well maintaining the quality and sanitation of prepared items.
Responsibilities
- Observe personal hygiene, sanitation, wearing of personal protective equipment (PPE), practice food safety standard and company rules
- Ensure the proper cutting techniques, grinding and preparation of meats such as beef, pork, and poultry, Seafood such as fish, squid, shrimp and vegetables for production
- Follow proper wrapping, weighing, slicing, trimming and preparing consumer-size meat, seafood and vegetable portions based on menu recipe instruction
- Conduct meat, vegetable and seafood inspection to ensure its quality, freshness and non-presence of foreign objects
- Proper handling and operation of power machines and sharp knives on a repetitive basis
- Follow various color coding of chopping boards with corresponding color-coded knives
- Perform regular reading and recording of freezer temperatures for meat,poultry and seafood products
- Daily practice of food safety by performing cleaning and sanitation of work stations and equipment (including freezers and chillers) before and after each use
- Must observe and practice waste management
- Perform additional food preparation procedures and assist the cook in minor cooking, when needed
Qualifications
- High school diploma / Vocational course or Bachelor's degree in HRM, Culinary, or any related field or it's equivalent.
- Minimum of 5 years proven experience in food preparation or meat cutting is required.
- Previous training and certification in food preparation or meat cutting/ butchering is strongly preferred.
- Strong knowledge and ability to use different hand tools, lift heavy items and work in cold or hot environment.
- Excellent verbal and written communication
- Preferably with motorcycle vehicle
