MANAGING DIRECTOR – COMMERCIAL & RESTAURANT OPERATIONS

Piggly Foods Corporation (PFC)

Executive Overview

Piggly Foods Corporation is seeking a high-performing executive to lead the commercial growth and operational excellence of its restaurant brands. This role is responsible not only for managing restaurant operations but, more importantly, for building a scalable and profitable restaurant business.

The Managing Director – Commercial & Restaurant Operations will have full accountability for revenue growth, profitability, guest experience, commercial strategy, business development, and operational execution across all PFC restaurant brands.

This executive is expected to think and operate like a business owner—making data-driven decisions, identifying new revenue opportunities, challenging assumptions, and continuously improving the business.

Success in this role is measured by sustained growth in sales, profitability, customer traffic, and long-term enterprise value.


Primary Mission

Build the most profitable and scalable restaurant group in Western Visayas by combining strong commercial leadership with operational excellence.


Key Responsibilities

Commercial Strategy & Revenue Growth

  • Develop and execute the overall commercial strategy for all PFC restaurant brands.
  • Identify new revenue opportunities beyond traditional restaurant sales.
  • Lead market research, customer insights, and competitive analysis.
  • Develop new restaurant concepts, products, and promotional campaigns.
  • Build strategic partnerships with corporate clients, government agencies, schools, cooperatives, and community organizations.
  • Expand catering, events, institutional sales, and other recurring revenue channels.
  • Continuously improve guest traffic, average spending, and customer retention.

Restaurant Operations

  • Oversee day-to-day operations across all restaurant branches.
  • Ensure operational consistency, food quality, cleanliness, and service standards.
  • Optimize food cost, labor cost, inventory management, and operational efficiency.
  • Drive continuous improvement through standard operating procedures and performance management.
  • Maintain compliance with all food safety and regulatory requirements.

Financial Management

  • Own the Profit and Loss (P&L) performance of all restaurant operations.
  • Prepare annual budgets, commercial forecasts, and financial improvement plans.
  • Analyze branch performance and implement corrective actions.
  • Improve branch profitability while maintaining customer satisfaction.
  • Ensure disciplined capital allocation and measurable return on investment for all commercial initiatives.

Leadership & Organizational Development

  • Recruit, develop, coach, and mentor restaurant leaders.
  • Build a high-performance culture focused on accountability, execution, and continuous improvement.
  • Develop succession plans for key management positions.
  • Establish performance scorecards and operational KPIs across all branches.


Executive Profile

The ideal candidate is not simply an experienced restaurant operator.

Minimum Qualifications

  • Bachelor’s degree in Business Administration, Hospitality Management, Marketing, Entrepreneurship, or a related field.
  • MBA or postgraduate studies are an advantage but not required.
  • Minimum of 10 years of progressive leadership experience in the restaurant, hospitality, retail, or consumer service industry.
  • Minimum of 5 years leading multiple business units or restaurant branches with full P&L responsibility.

  • Successfully increased sales and profitability of restaurant or hospitality businesses.
  • Led the turnaround of an underperforming business, branch, or region.

  • Built strategic partnerships that contributed directly to business expansion.
  • Successfully managed budgets, financial planning, and operational performance.
  • Established high-performing management teams and leadership pipelines.
  • Demonstrated strong execution capabilities with measurable business results.
